Healthy food and drink is one of the efforts that can be made to control factors in food, people, places and equipment that can or may cause disease or health problems. Nurses use a nursing care approach to overcome nutritional problems stated in nursing diagnoses. A nutritionist is an employee who is given full duties, responsibilities and authority who is authorized to carry out functional technical activities in the field of nutrition and food services, both in the community and hospitals. The aim of this research is to evaluate the organization of food and drinks and the role of nurses and nutritionists in providing nutrition to critical patients at RSU Mitra Sejati Medan. This type of research is qualitative descriptive research. The informants in this study were 7 people consisting of 5 nurses and 2 nutritionists. The data collection method uses observation, interviews and data analysis documentation starting with data reduction, data presentation and drawing conclusions. The results of the research show that the health of food and drink for critical patients at RSU Mitra Sejati Medan meets the PGRS requirements at 90.5%, and the nutritional service indicators at RSU Mitra Sejati Medan meet the PGRS requirements at 100%. The temperature in the hospital kitchen room by measuring 4 corners of the room obtained an average of 33.50 C, where this result is not in accordance with the Minister of Health Regulation. The humidity in the kitchen at RSU Mitra Sejati Medan is in accordance with the Minister of Health Regulation. Nurses play a role in providing nursing care by being responsible for providing nutrition to critical patients. Nutritionists act as counselors in improving nutrition for patients in collaboration with nurses who act as assessors. Nurses and nutritionists coordinate and need each other to ensure the effectiveness of providing nutrition to patients.
